Facts about Fats, Oils and Grease

Fats – Oil – Grease (FOG) can accumulate in a building’s private sanitary sewer lateral or a City-owned public sanitary sewer pipe in the street. FOG causes blockages in these pipes, as well as a potential sewage back-up into a property. When hot dishes and pans containing FOG are washed without properly removing food containing Fats, Oils and Grease, these materials harden downstream, causing blockages. This hardened FOG also reduced the capacity of the pipes, requiring expensive maintenance and repair costs!

What can I do to keep FOG out of sanitary sewer pipes?

  1. Conduct periodic training sessions with your food service staff to reinforce the need for FOG awareness and reduction.
  2. Review and post the FOG documentation (see attachments below).
  3. Make sure your food service staff scrapes & wipes all food, oil and grease off of dishes & pans before washing.
  4. Pour oil and grease into covered collection containers.
  5. NEVER pour oil or grease down any drain.
